The London-headquartered spirits heavyweight bought a minority stake in Ritual Zero Proof in 2020.
Nestlé agreed to a settlement and €2m ($2.2m) fine with French authorities over the scandal earlier this month.
The pan-European distiller said production will be covered by a new factory in its home market of Poland.
The beer behemoth is embarking on production, packaging, water and emissions projects at the site.
The deal includes Doctors' 235-acre vineyard, first planted in 1991.
The business said the move marked “a strategic transition… aimed at enhancing production capabilities and market presence”.
Containerised agricultural products passing through strike-affected ports amounts to $1.4bn a week, a trade association estimates.
Executives from Diageo, Pernod Ricard, Suntory Global Spirits and Moët Hennessy will speak at the two-day event.
